Mince Pies with Kenwood

These traditional British pies are a festive must-have at Christmas. Fill with a dried fruit mixture, bake and serve with brandy butter.

Mince Pies

Ingredients

  • 75g Icing Sugar
  • 100g Butter
  • 200g All Purpose Flour
  • 1 pinch Salt
  • 100g Egg
  • 400g Mince Pie Filling
  • 1 Egg

Method

  1. Add icing sugar and butter to your Kenwood bowl.
  2. Blend together with the dough hook.
  3. Then add all purpose flour, salt and egg to the dough.
  4. Mix until mixture comes together. 
  5. Transfer dough to lightly floured surface
  6. Divide into halves
  7. Wrap with plastic wrap
  8. Chill in fridge - approx 1 hr
  9. Pre-heat oven - 180°C
  10. Roll out until 1/8" (5mm) thick
  11. Cut out into rounds
  12. Line a clean cupcake pan
  13. Pre-bake - 5 min, 180°C
  14. Spoon mince pie filling into the cupcake pan evenly
  15. Cover
  16. Brush with egg
  17. Bake until golden brown - 10 min, 180°C
  18. Serve
