Olive & Artichoke Focaccia
This recipe can be prepared as a delicious snack, a mouth-watering starter or to complement your main dish.


Dough Ingredients:
- 350g Flour
- 1tbsp Sugar
- 1.5tsp Yeast
- 0.5tsp Salt
- 200g Warm Water
- 2tbsp Olive Oil
Topping Ingredients:
- 1 Garlic Clove
- 1tsp Sea Salt
- 1tsp Parsely
- 1tsp Rosemary
- 6tsp Olive Oil
- 190g Thinned Artichokes
- 100g Pitted Green Olives

Method:
To make the dough:
- Add ingredients into a jug.
- Peel and coarsely chop the garlic.
- Destem and finely chop the herbs.
- Flour the baking tray.
- Fit the Spiral Dough Tool to your Kenwood Kitchen Machine.
- Add the flour, sugar, yeast and salt into the mixer bowl.
- Start the machine at minimum speed.
- Carefully pour the oil.
- Mix on minimum for about 2 minutes.
- Knead on minimum speed for about 5 minutes until you have a smooth elastic ball of dough.
- Cover with a damp tea towel.
- Leave to prove for 1 hour or until doubled in size.
- Mix on minimum speed for about 1 minute.
- Place the dough onto a lightly floured surface.
- Divide the dough onto a lightly floured surface.
- Divide the dough into pieces and roll each piece into 12cm circles. Place them on a baking tray.
- Cover with lightly oiled plastic wrap.
- Let it prove for 30 minutes.
To make the topping:
- Add garlic, salt and herbs to the pester and mortar.
- Grind to a rough paste.
- Add oil to the mix.
- Pre-heat the oven to 200°C.
- Remove the plastic wrap and press your fingers into the dough to make dimples.
- Leave to rest for 10 minutes.
- Add the artichokes and olives to the dough.
- Spoon over the garlic and herb oil.
- Bake for 25 minutes at 200°C.
- Serve
